Heat up a large saucepan and swirl in 1 tsp vegetable oil    Dice and add 1 large onion and 2 diced cloves of garlic    Cook until golden in color    Add 1 can of black beans – 1 can of corn kernals and 1 can of diced tomatoes – along with 1 tsp cumin spice    Bring to a boil and simmer for 10 minutes    Remove from heat and stir in 1 tsp lime juice    Should be enough for 4 servings    Top each serving with 1 Tbsp of sour cream    Sprinkle each serving with cilantro and thin sliced scallions    Place some sliced celery nearby to crunch on
