Please try this recipe on salmon or another fish of your choice – my preference is salmon because it tastes so good when the flavors meld together with heat    Begin by preheating the oven to 400F and cover a broiler tray with foil that has been coated with cooking spray or oil    In a small bowl, combine 1/2 cup of sugar free apricot preserve (or marmalade) with 1 Tbsp Dijon mustard, 1/4 tsp ground ginger, 1/4 tsp ground cumin and 1/4 tsp ground coriander    Arrange four 6oz salmon filets on a broiler tray and brush the fish with half the apricot preserve mixture    Roast the salmon for about 7 minutes and turn over    Brush the remaining apricot preserve mixture over the salmon and broil for another 5 minutes or until the salmon is cooked through    Makes four delicious 6oz servings in under 15 minutes    Excellent with a mixed salad    Enjoy!
