Crepes can be a wonderful way to entertain over long weekends such as the approaching Memorial Day weekend They are a delicacy that can be served at breakfast or as an appetizer or as part of a dinner and as a dessert The kitchen can become an elegant creperie whether a savory or a sweet filling is chosen In a blender combine 2 eggs, with 1 cup milk, 2/3 cup flour, a pinch of salt and 1 1/2 tsp of extra virgin cold pressed olive oil Process until smooth and cover with plastic wrap Refrigerate for at least 1 hour After the batter has chilled – heat a skillet over medium high heat and brush brush the surface with olive oil Pour 1/4 cup of crepe batter into a pan….tilt the pan to completely coat the surface of the pan Cook the crepe until 2 to 5 minutes or until golden brown and turn the crepe over to cook the other side Repeat the cooking process with the remaining batter and stack the finished crepes Take an individual crepe and and spread a fruit preserve over the top Roll the preserve filled crepe and serve Other fillings can be as simple as a coating of lemon juice and a sprinkle of sugar or a chocolate spread I will be serving strawberry and blueberry crepes with lemonade throughout the holiday weekend Best wishes for a safe Memorial Day holiday
