When I first entered the catering experience – we always catered to families and the celebrations of life  *  Some were kosher celebrations and others could be extravagant cocktail parties  *  I will always remember coming home from kosher events with a big bag of Sweet Kugel  *  for me it symbolizes a sweet memory  *  Let me share one of the many recipes for this kosher dish  *  Begin by preheating the oven to 350F  *  Bring a large pot of water to a boil and cook 1 lb of medium egg noodles  *  In another large bowl, combine 3/4 cup of dried apricots, 3/4 cup of dried cherries or raisins, 5 large beaten eggs, 2 cups soy milk, 3/4 cup granulated sugar and 1 tbsp vanilla extract (optional)  *  Add the noodles after they are drained well and cooled  *  Stir and combine the noodles and sweet mixture  *  Pour it all into a greased 9×13-inch baking dish  * In another medium bowl, combine 2 cups of crushed corn flakes with 3 Tbsp of melted butter and another 2 Tbsp of sugar  *  Scatter the mixture over the noodles  *  Bake for 45 minutes or until set and topping is golden  *  Best to serve Sweet Kugel warm as a side  *  and don’t forget to send your guests home with some of the extra
