These are toxic treats that are also everyone’s favorite cookie  *  In an effort to reduce the fat and sugar – it is good to experiment with lower amounts of toxic ingredient  *  Stevia should be considered rather than granulated sugar – and extra virgin olive oil can be used instead of butter  *  The original recipe to prepare the cookies calls for 1 2/3 cups all purpose flour, 3/4 cup granulated sugar, 3/4 cup unsweetened cocoa, 3/4 tsp salt, 1/2 tsp baking powder, 3/4 cup of good quality chocolate chips and 3/4 cup plus 1 Tbsp butter – softened – and added 1 Tbsp at a time to be beaten at low-speed with a heavy-duty electric stand mixer  *  Press the dough together and place the mix between two sheets of parchment paper  *  roll to 1/8 inch thickness and chill for thirty minutes  *  Preheat oven to 350F  *  Remove and discard parchment paper from dough  *  Working quickly – cut the dough with 2 inch round cutter _ and immediately place rounds on parchment paper lined baking sheets  *  Re-roll the scraps and chill thirty minutes before cutting  *  Bake cookies on baking sheets at 350F for 6 minutes  *  Rotate baking sheets front to back and bake six more minutes  *  Remove from oven to a wire rack and cool completely (about 10 additional minutes) *  Repeat process with remaining dough  * Should make about 24 cookies  *  The parchment paper makes for an easy clean up  * A filling can be used if desired, to make 12 sandwich cookies  *  For me, I would rather have the twenty-four to sample from and give as treats
