This is a good way for apple lovers to enjoy the fruit as a desert or side without any flour concoctions surrounding it  *  a traditional Jewish Passover recipe that can be made more often than for  Passover Seder  *  It can create a nice segway between the Thanksgiving dinner and dessert  *  Start with 2 cups of peeled and cored apples  *  add one cup of yellow raisins  *  2 Tbsp of red wine  *  1/2 tsp of cinnamon  *  1/4 tsp ginger  *  and 1 1/2 tsp of honey – that  may be dissolved in warm water so that it covers more apples equally  *  Place in refrigerator to chill or serve at room temperature  *  I like to top it off with some sliced almonds  *  if the apples and raisins become overpowering –  a small amount of some diced celery can be a welcome crunchy addition !!
