This is a fun and easy tribute to international cooking  *  Also known as cheese balls – this recipe can be diminished by 1/2 or made in full for a serving of 24  *  Begin by preheating the oven to 375F  *  In a large mixing bowl pour two cups of tapioca flour, also known as cassava flour, and set aside  *  In a microwave safe glass bowl combine 2/3 cup of olive oil with 1/3 cup of water and 1 tsp salt  *  Heat the liquid mixture in a microwave oven for 1 minute or until white foam appears on top  *  Pour the hot liquid into the bowl of tapioca flour  *  Mix with a wooden spoon and let the dough rest for 10 minutes  *  Mix in 2 eggs and 6oz of grated parmesan cheese  *  Take a tsp of dough and roll the dough between your hands to form a ball  *  Place the ball on a baking sheet about 1 inch apart  *  Bake 20 to 25 minutes until the tops of the balls begin to brown  *  Remove from oven and let cool  *  Can be served warm!!
