Here’s a chance to sprinkle the summer seasonal symbol – corn – on pizza  *  Heat an oven to 550F  *  In a skillet heat 2 Tbsp of olive oil over medium heat   *  add one large sliced leek and sprinkle with salt  *  Reduce heat to medium low and continue cooking and stirring until the leek thickens….8 to 10 minutes  *  Roll out 1 ball of thawed pizza dough (about 6 oz) on a greased baking sheet  *  Spread leek over the dough and scatter 3 oz of fresh mozzarella over the crust  *  Sprinkle 1/2 cup of corn kernels on top  *  Bake until crust is browned 6 to 10 minutes  *  Garnish with fresh basil  *  Should serve two
