South African Fried Rice is a chicken dish that uses two kinds of oil; sesame and avocado * It is loaded with green onions, carrots and garlic * it also uses more eggs than you would think * This recipe is made with 4 cups of cooked rice and serves 6 – 8 portions * Lets start by heating 2 Tbsp of sesame oil with 2 Tbsp. of avocado oil in a large skillet or wok * use medium high heat * Add 1 lb. of chicken that has been cut into cubes * cook for 2 – 3 minutes per side until the chicken is cooked through * Transfer the chicken to a plate and set aside * Remember to thinly slice 3 green onions and divide them * Reserve two Tbsp. of onions for garnish * Add the remaining green onion plus 1 1/2 cups of diced carrots * Cook for 3 -4 minutes until carrots are softened * Add 2 – 3 cloves of minced garlic and cook for another minute * Push vegetables to one side of the pan * Add the three eggs to the other side and scramble * Add the 4 cups of cooked rice, cooked chicken and 3 – 4 Tbsp. of soy sauce to pan * Cook and stir well for 4 -5 minutes until all is warmed through * Season with salt and pepper * Garnish with reserved onions * It is now ready to serve * the left overs taste even better the next day!
I first tried this dish while in South Africa – southern tip of the African continent * If you are traveling clockwise from the Indian Ocean around the perimeter of SA, the Indian Ocean leads to the Atlantic Ocean * Then back on land comes Namibia bordered by Botswana * the northern most tip of SA touches Zimbabwe with Mozambique to the east * and Swaziland leading back to the Indian Ocean * it is surrounded by a combination of land and two oceans * There is no extreme climate in SA * It is sunny and temperate with the number of hours of sunshine among the highest in the world * SA may be best known for the Kroger National Park * Cape Town has a Mediterranean summer climate in the winter months * While mountain tops further north may be covered with snow * The country is not insulated from climate change * weather should be monitored * SA is special for really good fruit, fresh food, game reserves, good beaches and its buildings * the archecture ranges from English Edwardian baroque to Dutch Flemish Renaissance to contemporary * thanks to the countries English/Flemish heritage * for those who shop currency $1 USD converts to 16.74 SA Rand (ZAR) * while a SA Rand can only buy about .06 USD or almost 17 Rand to buy $1 USD *
The Cape Province is known for venison; kudu, springbok and blesbok * When I look at a map the country looks like a Rhino head * on the neck I see Cape Town to the west and East London to the east; with Port Elizabeth in between the two * In the middle (heading north) is the diamond capitol: Kimberly, the gold mines in Johannesburg, and further up lies Pretoria * Beyond Pretoria is the Kruger National Park * And of course where ever you travel there are places to stay such as hotels, motels, rest camps, caravans, camping sites, beach cottages, holiday flats and bungalows, etc. * While your in SA try some Van Der Hum – a tangerine flavored, brandy based liquor * and the beer can be very good also – Hansa is a specialty beer imported into the cities from South West Africa *
South African cities have entertainment * Breakfast dining from 7 to 9 * Mid-Day Lunching from 12 to 2 * Evening Dining from 7 to 9 * superb scenery, game reserves, parks and gardens * concerts, nightclubs, flea markets and zoos * its all there to be discovered * Savannahs, Forest, Wetlands and Mountains * I especially recommend Kruger National Park * along with the fruit and flowers and the panoramic views * not to mention the Aquariums, the amusement parks and art museums
